  • 4 squid of ½ pound each

  • 3 to 4 ounces smoked ham

  • 2 ripe tomatoes, peeled (or one cup canned Italian)

  • Coarse salt and freshly ground pepper to taste

  • About 4 tablespoons fresh chopped parsley

  • 1 medium to large onion

  • 2 to 3 tablespoons olive oil

  • 2 cloves garlic

Preparation

  1. Step 1

    Clean the squid. Chop the tentacles finely with the ham and tomatoes and add salt, pepper and chopped parsley to make a thick mixture. Stuff the squid with this, but not quite full and fasten each with a toothpick.

  2. Step 2

    Chop the onion and cook it gently in the oil with the whole cloves of garlic. Add the squid and cook them gently over a low heat for 20 minutes, adding a little water (or white wine) toward the end if the sauce seems to be drying up.

  3. Step 3

    Serve on a bed of rice.
