Salmon Cakes With Salsa

Ingredients
2 cups cooked boned salmon (about 1 pound)
4 ounces smoked salmon, minced
1 cup mashed potatoes
¼ cup finely chopped scallions
2 tablespoons minced fresh coriander
2 eggs
Salt and freshly ground black pepper to taste
½ cup bread crumbs
Vegetable oil for frying
Green salsa (recipe follows)
Preparation
- Step 1
Mash the salmon in a bowl. Mix with the smoked salmon, potatoes, scallions, coriander and eggs. Season to taste with salt and pepper.
- Step 2
Shape into 16 cakes about three inches in diameter and one-half-inch thick. Coat with bread crumbs and chill at least one hour.
- Step 3
Heat oil in a large skillet. Fry the cakes over medium heat until golden brown, turning them once to brown both sides. Keep them warm in a 200- degree oven until ready to serve.
Alternately the fish mixture can be formed into smaller patties to serve as hors d'oeuvres or a first course. The recipe will make four to five dozen bite-size cakes.

Probably best made with leftovers as otherwise you'll be cooking three dishes instead of one (grilled salmon, mashed potatoes and finally the cakes). That said I made it with three salmon steaks and four medium sized potatoes. I added an inch of ginger and skipped the smoked salmon. It was excellent!

Yummy. Have made these twice, done in the oven. Quite popular in this house! Have skipped smoked salmon, and used panko bread crumbs to coat. Delicious. Second time, didn’t have coriander so used parsley & added dijon mustard. Yummy. Easy.
