Ingredients
Yield:12 croutons
½ loaf French or Italian bread
1 garlic clove, peeled
2 tablespoons olive oil
¼ cup grated Parmesan or Gruyere, or to taste
Preparation
- Step 1
Rub the crust of the bread all over with the garlic clove.
- Step 2
Cut the bread into ⅛-inch-thick slices and arrange the slices on a baking sheet. Sprinkle with the oil and the cheese.
- Step 3
Broil until golden on both sides, then cut into 1-inch squares.
Tip
A recipe for leek and potato soup in the "60-Minute Gourmet" column on Dec. 18 omitted a step. A corrected version follows.
