  • 2 tablespoons black pepper

  • 2 teaspoons onion powder

  • 2 teaspoons salt

  • 1 teaspoon cayenne pepper

  • 1 teaspoon crushed red pepper

  • 1 teaspoon nutmeg

  • 1 teaspoon allspice

  • 1 teaspoon thyme (dried)

  • 2 teaspoons lime juice

  • 3 pounds chicken breast, boned and skinned

  • 10 kaiser rolls or 20 slices of bread

Preparation

  1. Step 1

    Preheat oven to 450 degrees.

  2. Step 2

    Combine all dry ingredients (except bread!) and mix with lime juice to form a paste. Rub paste all over chicken.

  3. Step 3

    Place breasts in an oiled pan large enough to hold them, and roast for 17 minutes.

  4. Step 4

    Remove from oven, let cool and place breasts on rolls or bread, adding relish, mayo, salsa, a variety of lettuces or anything else you like.
