Ingredients

Yield:About 1½ cups
  • 1 large egg yolk

  • 1 tablespoon Dijon mustard

  • 1 tablespoon white-wine vinegar

  • Salt and freshly ground white pepper to taste

  • 1 cup vegetable or olive oil

  • 2 tablespoon minced scallions

  • 2 tablespoons minced fresh chives

  • 2 tablespoons minced parsley

  • 2 tablespoons minced fresh basil

  • 1 tablespoon minced fresh tarragon or any fresh herb of your choice

  • ½ teaspoon chopped garlic

  1. Step 1

    Combine the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl.

  2. Step 2

    Add the oil in a thin stream while beating vigorously with a wire whisk. When the mixture is thick and smooth, stir in the scallions, chives, parsley, basil, tarragon and garlic and blend well.
