  • 2 pounds medium-size shrimp

  • 1 whole clove garlic, crushed

  • Salt to taste if desired

  • 12 peppercorns, crushed

  • 8 whole allspice

  • 1 bay leaf

  • 3 sprigs fresh parsley

Preparation

  1. Step 1

    Put the shrimp in a saucepan and add water to cover and the remaining ingredients. Bring to the boil and simmer 15 seconds.

  2. Step 2

    Remove from the heat and let stand to room temperature. Drain, peel and devein the shrimp.

Nice and tender. Serve atop a salad, or alone with cocktail sauce? Decisions, decisions...

I made 1/2 a recipe to add to a Caesar salad. I used 25-count frozen peeled, deveined shrimp--very easy, lots of flavor. I left out the parsley but added some crushed coriander seed.
