  • ¾ of a small head of cabbage, sliced as thinly as possible

  • 5 ounces olive oil (extra virgin preferred)

  • 4 ounces red wine vinegar

  • Juice of 1 lemon

  • Salt and freshly ground pepper to taste

  • ½ cup chopped fresh parsley

Preparation

  1. Step 1

    Place the sliced cabbage in a large mixing bowl.

    Combine the remaining ingredients, and blend thoroughly. Season to taste. Pour over cabbage, and toss well.

I used apple cider vinegar since I didn't have red wine vinegar. Wonderful!
