  • 4 red, ripe, firm tomatoes

  • Salt to taste, if desired

  • Freshly ground pepper to taste

  • ¼ cup fine fresh bread crumbs

  • 1 teaspoon finely minced garlic

  • 2 tablespoons finely chopped parsley

  • 2 teaspoons olive oil

Preparation

  1. Step 1

    Preheat the broiler to high.

  2. Step 2

    Split the tomatoes in half. Arrange the tomatoes cut side up on a baking dish. Sprinkle the cut halves with salt and pepper.

  3. Step 3

    Blend the bread crumbs, garlic, parsley and oil. Sprinkle equal portions over the tops of the tomatoes.

  4. Step 4

    Place the tomatoes about six inches from the source of heat and broil about five minutes.
