  • 1 pound lean chuck steak in one piece

  • 1 small leek, trimmed and rinsed well

  • ½ cup coarsely chopped onion

  • ½ cup coarsely chopped celery

  • ½ cup coarsely chopped carrot

  • Salt to taste, if desired

  • 12 peppercorns
