  • 1 teaspoon granulated garlic powder

  • 1 teaspoon granulated onion powder

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon ground turmeric

  • 2 teaspoons finely chopped fresh oregano

  • 4 large Idaho potatoes, peeled

  • 1 quart vegetable oil

Preparation

  1. Step 1

    Combine seasonings in a small bowl.

  2. Step 2

    Cut potatoes into ¼-inch-thick slices lengthwise, then cut each slice into ¼-inch-thick fries. Place in a large bowl of cold water.

  3. Step 3

    Heat oil in a large straight-sided skillet to 325 degrees. Dry potatoes in batches on paper towels. Fry each batch for 3 to 4 minutes and drain on paper towels.

  4. Step 4

    Increase heat of oil to 375 degrees and fry the potatoes again, in batches, until golden brown. Drain and sprinkle with adobo seasoning mix.
