Ingredients
1 teaspoon kosher salt
1 teaspoon superfine sugar
¼ teaspoon cayenne
2 inch-wide cubes watermelon
¾ ounce simple syrup
¾ ounce fresh lime juice
½ ounce joven mezcal (see note)
1 ½ ounce blanco tequila
Preparation
- Step 1
On a small plate, mix salt, sugar and cayenne with a fork. Lightly wet rim of a medium cocktail glass with water or lime juice, and dip glass on plate, coating rim, then tap to shake off excess.
- Step 2
In a cocktail shaker, crush watermelon with a muddler or long-handled spoon. Half fill the shaker with ice and vigorously shake the watermelon, syrup, lime juice, mezcal and tequila. Strain into glass and serve.
Joven mezcals are young spirits with no aging. They will usually be labeled as such and will be clear or have a very light color.

This is one of my favorite drinks. I use the cut up melon when that's all that is available, the whole melon when available. The results are the same. I use equal parts of pureed melon and tequila. I also don't add the simple syrup, the melon seems sweet enough to me. The mescal gives it a smoky taste, and the salt and sugar with pimenton which is what I use is so good. Cheers!

Love this drink — make it all summer every summer for friends. I dial the simple syrup down to 1/2oz and use Tajin seasoning for the rim instead of the homemade option in the recipe. Also make a tequila-only version for friends who don’t like the smoky flavor that mezcal adds (just increase tequila to 2oz). If you don’t want seeds in the drink, remember to pour through a strainer.
Very tasty. Could add a little mint. Perhaps a tiny bit more lime.
