Ingredients

  • 1 ½ pounds ground lean beef

  • 1 tablespoon butter

  • ½ cup finely chopped onion

  • 1 teaspoon finely minced garlic

  • Salt to taste if desired

  • Freshly ground pepper to taste

  • 1 red ripe tomato, about ½ pound

  • 4 flat anchovy fillets plus some of the oil in which they are packed

  • 4 rectangles sliced mozzarella cheese, about ¼ pound, each slice about ¼ inch thick

Preparation

  1. Step 1

    Preheat the broiler to high.

  2. Step 2

    Put the beef in a mixing bowl and set aside.

  3. Step 3

    Heat the butter in a saucepan and add onion and garlic. Cook, stirring occasionally, until wilted. Let cool.

  4. Step 4

    Add onion mixture to the beef. Add salt and pepper, and blend well with the fingers.

  5. Step 5

    Divide the mixture into 4 equal portions and shape into patties, each about an inch thick.

  6. Step 6

    Cut away and discard the core of the tomato. Cut into 4 slices, each about the same size. Sprinkle with salt and pepper. For each tomato slice, cut one anchovy fillet in half crosswise and arrange the halves on the slice in a cross. Brush with a little oil from the anchovy can.

  7. Step 7

    Arrange patties on a grill for broiling.

  8. Step 8

    Place the rack under the broiler with top of patties about 4 inches from the heat source. Broil 2 to 3 minutes, then turn patties. Place under broiler once more, leaving the broiler door open. Let broil 2 to 3 minutes. Top each patty with a slice of mozzarella. Center one anchovy-topped tomato slice on each patty. Place under broiler and let broil 2 minutes longer with door closed.
