Ingredients

Yield:6 to 8 small portions
  • 1 tablespoon butter

  • ⅓ cup finely chopped onion

  • 1 teaspoon finely minced garlic

  • 1 tablespoon curry powder

  • 1 bay leaf

  • Salt to taste if desired

  • Freshly ground pepper to taste

  • 1 cup rice

  • 1 ½ cups fresh or canned chicken broth

Preparation

  1. Step 1

    Heat the butter in a saucepan and add the onion and garlic. Cook, stirring, until wilted. Add the curry powder, bay leaf, salt, pepper and rice, stirring to coat the grains.

  2. Step 2

    Add the broth and cover. Bring to a boil, lower the heat and simmer for exactly 17 minutes. Remove the bay leaf and serve.
