Ingredients
20 medium leeks
1 to 1 ½ cups wine (optional)
½ cup olive oil
Salt & pepper to taste
Preparation
- Step 1
Clean and trim the leeks, leaving some of the root on.
- Step 2
Steam the leeks in water or wine until almost cooked.
- Step 3
Place leeks on a hot grill. Brush with olive oil and season with salt and pepper. Cook on each side for three to five minutes, or until they are slightly charred.
The times in the recipes are not to be followed exactly. When cooking on a grill there are a lot of variables, notably, the size and heat of the grill. Use your best judgment. Fish is done when white and flaky, but not dry.
