Blueberry Oatmeal

Ingredients
- 1⅓cups water
- ⅛teaspoon salt (optional)
- ¼teaspoon cinnamon
- 2teaspoons mild honey
- ⅔cup rolled oats or oatmeal
- ⅓cup blueberries
- ½teaspoon finely chopped or grated orange zest
- ½cup low-fat milk, soy milk, almond beverage or rice beverage
Preparation
- Step 1
Bring the water to a boil in a medium-size saucepan. Add the salt, cinnamon, honey and oatmeal. Reduce the heat, and simmer uncovered for five minutes or until most of the water has been absorbed. Add the blueberries, orange zest and milk (or alternate beverage). Bring to a simmer, and simmer five more minutes or until the oatmeal is thick and creamy and the blueberries have begun to pop. Cover and let stand for five minutes, then serve.
- To make in a microwave: Place the oatmeal, water, salt, honey, cinnamon and nutmeg in a large Pyrex bowl — at least 1½ quarts. Cover the bowl with a plate. Microwave at 100 percent power for three minutes. Let sit one minute, then carefully remove the plate. Stir in the blueberries, orange zest and milk. Cover with the plate, and microwave for two minutes more. Let sit for one minute so the oatmeal will absorb the milk.
- Advance preparation: If you want to save a few minutes in the morning, you could combine all the ingredients except the milk, blueberries and orange zest the night before. The trick to Oatmeal in the microwave is to sprinkle the cinnamon on the water and then heat. The cinnamon creates surface tension on the water and it never overflows. Without the cinnamon, the oatmeal overflows.
You are onto something! In my version I skip the honey as the mixture is already sweet and add a couple of egg whites for protein.
The trick to making oatmeal in the microwave is to use a ridiculously large bowl so it doesn't overflow. This trick makes oatmeal in the morning mindless.
I make this all the time using frozen Keweenaw blueberries and it is delicious!
Too much liquid! I waited forever for the porridge to get creamy and had to give up cause it never really did. The result is a bluberry soup too hot to eat. Very disappointing.
If you are new to eating oatmeal (me) and looking for a fantastic entry, this is not it. As others have commented, the cook time is incorrect. I doubled the 1st 5 minutes to 10, and it was still pretty moist at the end. The flavors were meh--not enough sugar if you want sweet, not enough other flavor to enjoy it not-sweet. I ended up heaping it with additional berries so that each bite only had a little oatmeal. Thus, I am not yet a convert to oatmeal for breakfast.
