Ingredients
1 ounce freshly squeezed lemon juice
1 ounce simple syrup
2 ounces gin
4 or 5 slices cucumber
Club soda, to top Mint sprig
Preparation

In the bottom of a mixing glass, muddle cucumber slices, lemon juice and simple syrup. Add gin, along with ice, and shake. Strain over fresh ice into a Collins glass, then top with soda. Garnish with the mint sprig.

We decided to make this cocktail in bulk to take to a picnic. Same ratios of fresh-squeezed lemon juice and gin, but I cut the simple syrup in half. Added an entire sliced cucumber and a handful of mint leaves then pulsed in our Vitamix. Topped with soda water. A huge hit!
This is also great if you replace the lemon with lime and the gin with Vodka.
"Isn't that a mojito?" Yes, if you replace the vodka with rum, muddle a bunch of mint and omit cucumbers entirely. Apart from those things, sure, the identical thing.
I made this to have in a punchbowl for a party and it was a huge hit! I multiplied the recipe by 25 and "muddled" the cucumbers, lemon juice, and simple syrup (a bit less than the recipe called for to keep it from being too sweet) in a blender, before straining into the punchbowl and adding the other ingredients. Delicious!
Not bad - made it with the Empress Gin and u think the floral notes suited it.
Very refreshing drink. Used frozen cucumber pieces and reserved cucumber water from strained cucumbers used for tzatziki.
