  • 2 cups pineapple juice

  • 8 stalks fresh lemon grass, 6 coarsely chopped and 2 halved crosswise

  • 4 small fresh pineapple wedges

  • 8 ounces of Absolut Citron vodka

  • Juice of 1 lime

Preparation

  1. Step 1

    In medium saucepan, simmer pineapple juice with chopped lemon grass for 15 minutes; let cool. Strain into a jar, and chill.

  2. Step 2

    Spear the pineapple wedges with the halved lemon grass stalks. To a pitcher with ice, add pineapple juice, vodka and lime juice. Mix, and strain into 4 chilled martini glasses. Add pineapple-wedge garnish.
